Puratos Extraglace Vanilla is a universal base for making your personalized homemade ice cream. You prepare the ice cream as you prefer. Follow your own recipe by adding cream, egg yolk, butter and other ingredients. Use 1 kg of Extraglace vanilla on 3L of milk or use 1 kg of Extraglace vanilla on 2.25L of water.

Cold preparation: Mix the Extraglace Vanilla with the milk and cream and homogenize with a hand blender for ± 1 minute. Allow to ripen in the refrigerator for at least 30 minutes. The base is ready for flavoring or turbinating immediately. Please note: always heat raw milk first to pasteurize it!
Hot preparation: Bring the milk to the boil, remove from the heat and add the Extraglace Vanilla and mix. Homogenize with a hand blender for ± 3 minutes. Cool as quickly as possible to 7°C and let ripen for at least 12 hours. The base is ready for flavoring or turbineing immediately.

TIP:
If you make a hot preparation, boil an open vanilla pod with the basic composition.
